Dr. Pepper /Mexi Coke Peanut Brittle

You have to use the Dr. Pepper or Mexican coke that's made with cane sugar instead of high fructose corn syrup.--------------------------------------------------------------------------- From homesicktexan.blogspot.com--------------------------------------------------------------------------- Adapted from cooking with Dr. Pepper and 7-Up.

SERVES 12 , 1 1/2 lbs (change servings and units)

Ingredients

  • 1 1/4 cups sugar
  • 3/4 cup butter (1 1/2 sticks)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon cayenne
  • 1/4 cup Dr. Pepper cola or Coca-Cola, with sugar not high fructose corn syurp
  • 2 cups dry roasted salted peanuts, shelled
  • 1/2 teaspoon baking soda

Directions

  1. 1
    Line a baking sheet with parchment paper.
  2. 2
    Combine all the ingredients except for the baking soda in a pot, cook on medium heat and bring to a boil stirring often.

    When the temperature reaches 290 degrees, remove from heat and stir in soda. Mixture will foam up and double in size.

    Spread mixture thin on baking sheet using a silicone spatula.
  5. 5
    When mixture cools and hardens (about half an hour), break into pieces and serve.
