Dominican Sweet Potatoes

This tasty recipe from the Dominican Republic is usually made with a type of island pumpkin called calabaza. I've adapted it to use with regular sweet potatoes.

SERVES 6 (change servings and units)

Ingredients

Directions

    Heat oil in a large nonstick skillet over medium heat. Add both types of onion. Cook, stirring frequently, 5 minutes.

    Add sweet potatoes, mixing with the onions.
  3. 3
    Combine remaining ingredients and add to skillet. Mix well. Cover skillet, reduce heat to medium-low, and cook 40 minutes or until sweet potatoes are tender. Stir occasionally.

    Uncover and continue to cook, stirring occasionally, 10 minutes.

Delicious sweet potatoes with lots of flavour. Unfortunately I didn't have limes and had to use lemon juice and fresh lemon thyme. Thank you morgainegeiser for a great recipe, made for Swap #29 - June 2009.

    I love sweet potatoes! These were great. The orange juice and lime juice made them sort of sweet, but not too sweet. I did use a little extra thyme. Mine were done long before 40 minutes, so watch them closely. Thanx so much for a new sweet potato recipe!
