Delicious 'kitchen Sink' Meatloaf

The turned-out-super-tasty "wing-it" meatloaf recipe! My 15 year old LOVED this, and I couldn't stop eating it either! It was very quick to assemble, using the food processor to slice, chop, grate, and crush. With the green pepper, pepper jack cheese and tortillas it seemed like it might come out a bit spicey, but it had a touch of sweetness that was delicious.

SERVES 4 -6 , 4 -6 4 oz servings (change servings and units)

    Set oven to 350°F.
  2. 2
    Chop onion and green pepper, by hand or in food processor (slice).
  3. 3
    Heat frying pan on medium, melt butter and add chopped the vegetables. Cook until translucent.
  4. 4
    Grate the pepper jack cheese and set aside.
  5. 5
    Crush the Scoops to a fine consistency and set aside.
  6. 6
    Put the ground beef in a medium size bowl and mix in the eggs, salt, pepper, onion, and green pepper. Add in the cheese and crushed Scoops til well combined.

    Place in baking pan and form in to desired shape

    Drizzle ketchup and barbeque sauce over the loaf using a diagonal pattern.

    Put in oven and cook ~45 minutes.
