Dad's Sliced Sausage

My dad made this sausage for us when I was growing up - it was a typical weekend breakfast along with fried eggs. The smell of it still brings back memories of Dad's shortwave radio broadcasting Scottish football games. When I moved out and my dad got sick, I asked him for the recipe. He can't make this sausage anymore, but now I make it, and my kids are the ones that enjoy it on Saturday morning. I use lean ground beef but my dad insisted on medium. I know it looks like a lot of pepper, but the finished sausage isn't spicy-hot. Prep time includes freezing time, or a good guess at it.

SERVES 12 , 2 loaves, 12 slices each (change servings and units)

    Mix all ingredients until well-combined.

    Shape into loaves, wrap in plastic and freeze.

    To cook, thaw until sliceable, then slice and fry until browned on both sides and cooked through.

    I suppose you could also make this into patties or something.
