Curried Rice and Artichoke Salad

This is a family recipe that we make for all of our picnics. The salad is best if made a couple of hours, or even a day, ahead. It can be served warm, but is best served chilled. It is also very good with 2 c. chopped cooked chicken added. I hope you enjoy this as much as we do!

SERVES 6 -8 (change servings and units)

Ingredients

  • 10 ounces chicken rice-a-roni
  • 2 tablespoons olive oil

  • 2 (6 ounce) jars marinated artichoke hearts, chopped, reserve liquid
  • 1/2 green bell pepper, diced
  • 4 green onions, chopped both white and green parts
  • 15 pimento-stuffed green olives, sliced thin
  • 1 tablespoon curry powder
  • 1/3 cup mayonnaise (Hellmans works well for this recipe)

Directions

  1. 1
    Cook Rice as directed on box, but brown using olive oil, instead of butter.
  2. 2
    Mix Mayonnaise, curry powder and reserved marinade together, and set aside.

    Combine cooked Rice-a-Roni, artichoke hearts, olives, green onions and bell pepper.

    Pour mayonnaise mixture over rice mix.

    Stir to coat.

    Refrigerate until serving.

    Enjoy!

This was so good! I tried making it last mintue for a picnic on Saturday and it was awesome then. The left overs were even better! Though there a lot left over yesterday, none of it made past lunch. Lol

    I made this salad over the weekend and took it to a dinner party at our friends house. There were 8 adults and 3 children, and it made a nice portion for each person. Although everyone was sad there wasn't any left over to take home! Once again I was asked for the recipe and everyone was very impressed by the unique and delicious flavors. I did not add any meat to the salad, and it was just fantastic! I will be making this again and again! You are a fabulous chef.. keep the recipes coming!
