Crock-Pot Italian Sausage and Peppers

Taken from busycooks.about.com. This updated version of Italian sausage and peppers cooks in the crockpot.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Cook turkey sausage in heavy skillet over medium heat until browned, turning occasionally.
  2. 2
    Layer half of the onions on bottom of 3-4 quart crockpot, then add half of the peppers.
  3. 3
    Add all of the browned turkey sausage, then the rest of the onions and peppers.
  4. 4
    Add bay leaves and other spices.
  5. 5
    Combine diced undrained tomatoes, tomato paste, and red wine in small bowl and mix well to blend.

    Pour over mixture in crockpot.
  7. 7
    Cover slow cooker and cook on low for 6 hours.

Very good and easy — my kind of dinner. Popped in a video while we had this great no work meal. I only used 1 pound of sausage (sweet) so skipped 1 onion, 1 bell pepper, 1 bay leaf and only used 2 garlic cloves. Thanks for sharing!

    I used a lb of sweet and a lb of hot sausage and it was very good. I also stirred it at 6hrs then cooked it for another hr before serving.
