A great snack for kids. Using pesto adds flavor and means you don't have to bother dipping the chicken in four and egg before coating in crumbs.

60 bites (change servings and units)

Ingredients

Directions

    Cut the chicken into bite sized pieces (about 15 pieces per breast).
  2. 2
    Put the pesto in a bowl and mix with the chicken until well coated.
  3. 3
    Tip the crumbs into a plastic bag.
  4. 4
    Add the chicken pieces in batches to the bag and give it a good shake to coat.
  5. 5
    Heat the oven to 425°F Pour a little oil onto a shallow baking tray to cover it.
  6. 6
    Heat the tray in the oven for 5 minutes.
  7. 7
    Tip the chicken onto the tray and return to the oven for 15 mins until crisp and cooked through.
