Creole Tomato Soup (Low Fat)

Quick and easy. A nice warmer-upper lunch for a winter day. Serve with a crusty French bread or rolls.

SERVES 4 (change servings and units)

Ingredients

Directions

    In a Dutch Oven over medium heat, melt margarine.
  2. 2
    Add green pepper, onion, garlic and 3 tablespoons of the broth. Cook, stirring, until onion is soft (about 10 minutes). If liquid begins to evaporate, add a little more broth.

    Add all remaining ingredients. Cover and bring to a boil. Lower heat and simmer for at least 15 minutes, or until green pepper is tender and flavors are well blended.

    Serve hot.

    Soup will keep in refrigerator for 2-3 days and then reheated.

I truly hate the tomato soup that you get in cans and have as far back as I can remember. When I saw this recipe I just had to try it and I'm so glad that I did. It's wonderful! I skipped the sugar, it truly wasn't needed and I had red bell pepper so that is what I used. The chunks of tomato, pepper and onion with the fragrant and flavorful herbs make an outstanding soup. At last, a tomato soup that actually tastes Great! Made for Photo Tag.
