Creamy Tomato Tortellini

Here is a very tasty pasta dish that is so easy and quick to make and the very delicious!! It's for one of those nights that you are running late - You can substitute your favorite veggie blend for the broccoli.

SERVES 4 (change servings and units)

Ingredients

  • 1 (350 g) package cheese or tortellini (fresh or frozen)

  • 2 cups frozen broccoli florets

  • 1 (540 ml) can diced tomatoes, undrained
  • 1/2 cup philadelphia cream cheese with garlic and herbs
  • 1/4 cup parmesan cheese, grated

Directions

  1. 1
    Cook pasta as directed on package; add broccoli to the boiling water for the last 3 minutes of the pasta cooking time.
  2. 2
    Meanwhile, cook tomatoes in large skillet on medium heat 5 minutes. Add cream cheese spread; cook 2-3 minutes or until cream cheese is completely melted and mixture is well blended, stirring frequently.

    Drain pasta mixrture. Add to tomato mixture in skillet; mix lightly. Sprinkle with Parmesan cheese.

Fantastic! I love recipes that are guest worthy but are really simple and quick! I'm torn with wanting to play with the recipe and just going with the simplicity of the original because it is just wonderful as is. It has a really beautiful color to it as well. I really wished I had that premium membership so I could post a pic. Got to do that. Will most definitely make again cause DH loved it. Thanks for posting.
