Creamy Broco-Vita Soup

Don't let the name fool you. this is one fantastic soup. it's smooth, creamy and comforting with a declicous flavor with a hint of velveeta cheese. this soup is awesome served hot or cold. best part is, all ingredients are right in your cupboard or fridge.

SERVES 12 , 1/2 gallon (change servings and units)

    Wash and cut broccoli, place in steamer. Steam until fork tender. Add spinach on top and steam the last 2 minutes Pour into blender, add 1 c of milk and blend until smooth. Only blend 1/2 blenderful at a time, always including the milk in with the broccoli. Repeat until all broccoli is used. Pour into large bowl. Repeat blending again for a super smooth consistency. Pour into large pan to heat.

    (While the broccoli is steaming, place onions, garlic and butter in skillet and brown. Add flour and mix until smooth. Place into blender with 1 c milk and broccoli. Blend until smooth.).

    Placve pan on stove and cook over med heat. Add cream and any remaining milk. Drop in cubes of cheese spread. Salt and pepper to taste. Heat until just bubbly.
