This breakfast entree is a wonderful combination of hard-boiled eggs and dried beef as it is served with a very tasty Bechamel Sauce over rye toast. The green onions are served over the top of the sauce. The plate is garnished with fresh strawberries.

    Peel and mince the maui onion.
  2. 2
    Cut the serrano pepper in half, remove the seeds and mince the pepper.
  3. 3
    Place the onion and pepper in a small bowl and set the bowl aside.

    Wash and dry the green onions.
  5. 5
    Slice the green onions and place in a small bowl.
  6. 6
    Melt the butter in a medium saucepan and add the pastry flour to make roux.

    Stir the roux to prevent from burning.

    In a small saucepan warm the heavy cream.
  9. 9
    Add the warm cream to the roux to make Bechamel (White Sauce).

    Add sea salt, white pepper, fresh nutmeg, worcestershire sauce, bay leaves, dried beef, maui onion and serrano pepper to the sauce.

    Bring the Bechamel to a slow boil and reduce to a simmer for 10 minutes.

    Stir the Bechamel to prevent the sauce from burning.

    Remove the bay leaves.

    Toast the rye bread and spread 1 teaspoon of mustard over the toast.

    Place the toast on a warm plate.

    Spread one sliced hard-boiled egg over the toast.

    Cover the toast with Bechamel Sauce and top with chopped green onions.
