Crab and Potato Cakes

Simple, succulent and summery. Time does not include chilling.

SERVES 4 (change servings and units)

    Peel and roughly chop the potatoes. Boil in a large pan of salted water for 10-12 minutes or until just tender. Drain and mash and allow to cool completely.

    Combine the potatoes, crabmeat, herbs and mayonnaise in a mixing bowl.
  3. 3
    Shape into 8 cakes. Cover and chill for 6-8 hours.

    Spray a large non stick frying pan with cooking spray.
  5. 5
    Cook the cakes for 3-4 minutes on each side or until lightly browned.
  6. 6
    Serve immediately with a green side salad.
