Pancakes freeze well. I found this recipe on Obesity Help. The recipe was posted by Carole F. I have not tried the recipe, but I'm posting it for safe keeping.

SERVES 1 -2 , 4 pancakes (change servings and units)

    Put all the ingredients into a blender and mix until smooth.

    Lightly spray skillet and place over low heat. When the skillet is hot, spoon the batter onto the skillet and cook till it starts bubbling and has set up, flip and cook till golden brown.

    Serve with sugar free syrup or sugar free fruit spread.
