Our friend and her family came over for Thanksgiving one year. So Lori, asked what can she bring? I told her any type of casserole would be fine. Well I did not know that it would be a big hit!! That was over 8 years ago. So we've been serving it every Thanksgiving, Chrismas and by special request.

SERVES 6 -8 (change servings and units)

Ingredients

  • 1 (14 3/4 ounce) can creamed corn

  • 1 (15 1/4 ounce) can whole corn, drained
  • 1 cup melted butter
  • 3 eggs
  • 1 cup sour cream
  • 1 tablespoon sugar

  • 1 (8 1/2 ounce) box Jiffy corn muffin mix

Directions

    Preheat oven to 350.

    Drain the whole kernel corn. Mix together everything in a bowl.

    Bake in a greased baking dish for 60 minutes.

    Made for Fall 09 PAC exactly as the recipe was given. I must admit I have NEVER been crazy about corn pudding/casserole, but this recipe has so changed my mind. This is really easy to make, and delicious, I have added it to my Holiday Cookbook and plan on making it to go with both Thanksgiving and Christmas meals. Thank you for showing me even old dogs can learn new tricks.

    This is indeed a super recipe. Everyone in the south loves corn pudding/casserole, but anyone who has tried to make it know how tricky it can be so it sets up. This makes a super, fluffy pudding. The trick is the Jiffy Mix. It's a winner, we serve it every Holiday. Yum!
