This has to be my new favorite comfort food! I used full-fat mozzarella cheese and 3% fat milk and it was delicious! No pico de gallo to be found, so I used the Middle Eastern version instead — matbucha. My youngest really enjoyed what she called polenta pancakes. I made this for ZWT5 and I'm so glad I did, otherwise I might never have happened upon this recipe! Thanks!
