There is a real assortment of recipes here and many of them will not, at first glance, look to be healthy or diabetic. However, these are all recipes that I use and I'm insulin dependant. The thing to remember is that they are all easy to convert. When you see sugar, read, think and use Splenda. When cream is an ingredient use low or fat free milk ( or my personal fav's far free evapeoated milk or fat free liquid coffee creamer). If whipped cream is a garnish, just skip it. Garnishes are always an option. If you see mascopone or cream cheese, use low or fat free cream cheese. Don't forget that you can use chocolate chips and raisins, just reduce the amount ask for by half if you wish to trim the sugars. Good Eating and Happy Holidays!
