Christmas cookies 2007

Cookbook by

~Rita~

The cookies I plan to make for 2007 holiday season! Check out this for information on cookies http://www.recipezaar.com/bb/viewtopic.zsp?t=232832 Go ahead and freeze assorted cookies to keep yourself supplied with yummy goodies throughout the holidays. BUT! Don't try to freeze soft meringue-type cookie dough! Freezing Cookies & Freezing Cookie Dough Looking ahead to the holiday season I know you can get all the baking done, you can achieve this by freezing your cookie dough or fresh baked cookies ahead of time. Cookie dough will freeze well for 4 to 6 weeks. Chocolate chip, brownies, peanut butter, and sugar cookie dough (or anything similar) freezes well. Rolls of dough should be double sealed tightly in plastic wrap. Other kinds of dough should be stored in airtight containers or double ziplock freezer bags. Drop cookies (unbaked) may be frozen on cookie sheets and then transferred to freezer bags. Let stand at room temperature for about 30 minutes before baking or defrost in the refrigerator for about 2-3 hours. Please do make sure to label the container with the date and type of cookie dough. I forget and then it`s surprise cookies! As the holidays get closer you can get that last bit of shopping done or last home made gift made instead of spending all your time in the kitchen. Like we don`t like too! I prefer to Freeze Baked Cookies (get it done)! Almost any baked cookie freezes well. Let cookies completely cool before freezing. Wrap cookies individually in plastic wrap then store them in a Ziploc freezer bag or storage tins. You can also just layer the cookies between layers of waxed paper in the container, but the individually wrapped ones will store longer. Freeze frosted cookies uncovered in an odor free freezer first until they are firm. Then pack them in airtight container lined with plastic wrap or foil. Make sure to label the container with the date and type of cookies. Unfrosted cookies can be frozen up to 6-12 months (frosted, about 3 months). Frozen cookies thaw in about 10 minutes at room temperature (if you can wait that long). If cookies should be crisp when thawed, remove them from the container before thawing. Double-wrap the cookies securely and write the date, if they need to be dipped or decorated, and the type of cookie on the outside of the package. When you are ready to eat your frozen baked cookies, just let them come to room temperature. Enjoy!”
