Fresh, healthy, tasty and satisfying. My husband always asks for seconds!

SERVES 4 , 4 side salads (change servings and units)

Directions

    Thoroughly blend all dressing ingredients, store in fridge until salad is ready.

    Gently wash, drain, dry, tear spinach leaves.
  3. 3
    (Drying leaves in a salad spinner works best).
  4. 4
    Arrange spinach in individual serving dishes.
  5. 5
    Nicely arrange remaining salad ingredients on top of spinach.
  6. 6
    Drizzle dressing on each salad, and toss to gently coat leaves.
