Looking for a substitute online and found this one @ HowStuffWorks.

    Combine milk and cornstarch in small saucepan. Stir constantly over high heat until mixture boils and thickens. Immediately pour into small bowl; stir in extract. Cool.

Made for Aus/NZ Recipe Swap #29. I wanted to try this because it is difficult for me to find canned coconut milk that I can use (have an allergy to one of the ingredients and was hoping that this would be a great sub. It's okay, but I wouldn't want to use it all the time as the coconut extract gives it an artificial taste.
