A very nice and light cookie. Sugar can be cut down if it's too sweet.

SERVES 16 , 16 cookies (change servings and units)

    Preheat oven to 350°F.

    Lightly grease cookie sheets or line with parchment paper.
  3. 3
    Whip egg whites to soft peaks.
  4. 4
    Add sugar and beat to stiff peaks.
  5. 5
    Combine almonds, cocoa, cinnamon, fold into egg whites.

    Drop by the spoonful on to cookie sheets about 2" apart.

    Bake 10-12 minutes or until lightly browned.

    Transfer to wire racks to cool.
