Coca Cola & Ketchup Chicken from Barbados

This recipe is from Barbados and the submitter to the Canadian Women's Club of Barbados says it is absolutely delicious. It certainly is easy enough for even non-cooks to prepare.

SERVES 6 (change servings and units)

Ingredients

  • 4 lbs chicken, cut up into serving sized pieces
  • 1 cup Coca-Cola
  • 1 cup ketchup
  • salt & pepper

Directions

  1. 1
    Mix together the Coca Cola & ketchup in a bowl.
  2. 2
    Place the chicken pieces in a buttered baking dish.
  3. 3
    Pour the sauce over the chicken, then sprinkle with salt & pepper.
  4. 4
    Bake in a preheated 350 degree F oven for about an hour uncovered, until the chicken is tender and has a nice glaze.

Hello Dan-Amer #1 Thank you for posting this recipe. At first, I could not imagine that a mixture of ketchup and coca-cola would cook such a tender and tasty chicken. I used boneless, skinless chicken breast, cut into larger pieces and found that 20 minutes was perfect for the cooking time. I removed the chicken and let the sauce thicken slightly, and WOW, was it ever tasty. I will make this recipe again, but will use some chicken thighs, chicken legs, chicken drumettes and some chicken breast. The dark meat will take a bit longer to cook, so would remove the chicken breasts at about 20 minutes cooking time. I will add some crushed red hot peppers or a small amount of Sambal Oelek and also some fresh garlic. This will give the chicken a bit of a spicy flavor.     I used boneless chicken breast so could not bake it as long as called for so it didn't have much of a glaze. I would have to do a reduction on the sauce to make it much thicker for it to work. Some of the girls really enjoyed it but most thought it was just okay. Not a hit here but worth the try if you use bone in pieces.
