This recipe originally came from the Milk calendar. It's very good, especially with the garnish.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

  1. 1
    Melt butter & cook onions until soft, but not brown. Stir in flour & cook, stirring, for 5 minutes over medium-low heat (to get rid of raw taste).
  2. 2
    Cool slightly & whisk in milk. Bring to a boil. Add potatoes, thyme, salt and pepper. Lower heat, cover & simmer for 20 minutes (until potatoes are tender).

    Add clams with juice & heat through. Do NOT boil. Taste & adjust seasoning (if necessary).

    Serve & garnish with bacon, croutons & green onions.
