Citrus - Hazelnut Bars

Another great recipe from Better Homes & Gardens these double citrus bars are sweet and tangy. Especially good with tea in the afternoon. Enjoy!

SERVES 20 , 20 Bars (change servings and units)

Ingredients

  • 1/3 cup butter (softened)
  • 1/4 cup sugar (granulated)
  • 1 cup flour (all, purpose)
  • 1/3 cup hazelnuts (finely chopped or filberts, almonds toasted)
  • 2 eggs
  • 3/4 cup sugar (granulated)
  • 2 tablespoons flour (all, purpose)
  • 1 tablespoon orange (shredded finely peel)
  • 2 tablespoons oranges (juice)
  • 1 teaspoon lemon (finely shredded peel)
  • 1 tablespoon lemon (juice)
  • 1/2 teaspoon baking powder

Directions

    Preheat oven to 350°F.

    For crust: In a medium bowl, beat butter with electric mixer on medium to high speed for 30 seconds.

    Add 1/4 cup granulated sugar; beat until combined.

    Beat in one cup of flour and half of the nuts until crumbly.

    Press mixture into bottom of ungreased 8x8x2 - inch baking pan.

    Bake about 10 minutes or until golden brown.

    Meanwhile, in another medium bowl, combine eggs, 3/4 cup granulated sugar, 2 tablespoons flour, orange peel, orange juice, lemon peel, lemon juice and baking powder.

    Beat on medium speed about 2 minutes or until combined.

    Pour mixture over crust.

    Sprinkle with remaining nuts.

    Bake about 20 minutes or until edges are lightly browned and center is set.

    Cool in pan on wire rack.

    If desired, sprinkle with powdered sugar.

    Cut into bars.

    Store bars, covered, in refrigerator.
