Chocolate Cherry Nut Muffins

I make these every year when the cherries are ripe.

SERVES 12 , 12 muffins (change servings and units)

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon lemon rind, grated
  • 3/4 cup semi-sweet chocolate chips, miniature
  • 1 cup cherries, pitted and chopped
  • 1/2 cup almonds, slivered and blanched
  • 1 cup milk
  • 1/3 cup oil
  • 1/3 cup butter, melted and cooled
  • 1 egg, beaten lightly

Directions

    In a bowl, soft together the flour, sugar, BP and salt.

    Stir in the rind, chips and almonds.
  3. 3
    Combine the mixture well and stir in the chopped cherries.
  4. 4
    In a small bowl, whisk together the milk, oil, butter and egg.

    Add this to the flour mixture.

    Stir until batter is just combined.
  7. 7
    Fill sprayed muffin cups.

    Bake at 400 deg. for 20-25 minute

    Makes 12 muffins.

omg I need to do this sometime I will comment on how it turned out but it sounds so great hahahha I love muffins with chocolate chips and fruit. Luvin it!!

    Great recipe! We used almond extract instead of the nuts but otherwise followed exactly - was more like a cupcake than a muffin but we loved them. Thanks for sharing!
