    Make the spice mix:.

    Combine all ingredients thoroughly.

    Make the chili:.

    In a pan over, medium heat, warm one tablespoon oil. Lightly saute meat in batches, adding more oil if needed. In a stock pot, combine meat with obion, green chilies, garlic, one can chicken broth, tomato sauce and half of the spice mix. Simmer 2 hours.

    Stir in remaining spice mix and comtinue cooking for one hour, adding more broth if necessary, to maintain the stew like consistency. Adjust the seasoning to your personal taste during the last 15 minutes of cooking.
