Great chicken parmigiana recipe. The chicken was nice and crisp had a lovely flavor combination with the tomatoes, ham and cheese. I also loved including steamed veggies into the recipe, to make it a complete meal. Thanks for the great idea! Due to some family preferences, next time, I will probably use a tomato puree instead of chopped and maybe even leave off the ham.

I LOVE chicken parmagiana and I loved this version. While neither of us have diabetes, it's fantastic to know that this is suitable to serve to our friends that do. It is as good as any I've had thanks Pat.. II used 2 chicken fillets for the two of us and didn't bother to cut and flatten them out, but I would do this if we had a diabetic dining with us.
