Chicken Giblets and Livers in Sauce a La Chine

A delightful dim sum appetizer from the Diana Liu cookbook.

SERVES 6 -8 , 1 1/2 lbs. (change servings and units)

Ingredients

Directions

    Mix water, soy sauce, sugar, star aniseeds and sherry in a pot, cover; bring mixture to boil.
  2. 2
    Add giblets and livers; bring to boil again; cover and simmer 10 minutes.
  3. 3
    Remove livers from sauce; allow giblets to continue cooking for 1 1/2 hours.
  4. 4
    Remove giblets from sauce.
  5. 5
    Slice giblets and livers.
  6. 6
    Serve cold.
