Chicken Fajita Remix Pasta

My boyfriend went through this phase where he wanted fajitas every single night for dinner. I got fed up one night and said FINE! but I'm switchin' it up! Put all the ingredients in some pasta and this tasty dish was born. (He loves it...) Consider this like a "Semi-Homemade" type of meal. **Please note: I eyeball most of my seasonings. Do what works for you!

SERVES 4 -6 (change servings and units)

    Bring water to a boil in a large pot and begin cooking pasta.
  2. 2
    Heat oil in skillet. Cut the chicken in chunks and lightly brown with 1/2 pk of fajita seasoning, salt and pepper. Cut onion and pepper in strips (or diced) and cook with chicken.

    In a small saucepan, combine Alfredo sauce, the remainding fajita season, hot sauce, garlic powder, salt and pepper (use whisk to break up fajita seasoning in sauce). Simmer on med-low while pasta and chicken/vegetables cook.

    Drain pasta and return to large pot. Throw in the chicken and vegetables, followed by the sauce.

    Toss and serve!

    ** I like to throw on some diced pickled jalapenos in my bowl for some extra heat and flavor.

    ** For leftovers, try tossing in a dollop of sour cream and added hot sauce after reheating in the microwave. Mmm!

    ** Can easily be made vegetarian. Just omit the chicken and add more veggies! Yum!
