Chicken and Olive One Pot Roast

The tomatoes, onions and beans all create a lovely sauce for the chicken.

SERVES 4 (change servings and units)

Directions

    Heat the oven to 350°F.
  2. 2
    Place half the oil, the onions, tomatoes and garlic in a roasting tin and cook in the oven for 15 minutes.

    Fry the chicken in the rest of the oil for 2-3 mins until golden.
  4. 4
    Add to the onions, cook for 10 mins then add the beans, olives and zest.
  5. 5
    Return to the oven for 5 minutes.
  6. 6
    Serve sprinkled with parsley.
