Cheesy Chive and Onion Toasties/Jaffles

Here is a recipe for that age old appliance called a jaffle iron or you can use the new age appliance called a sandwich maker. This is a good camping recipe if you have a jaffle iron.

SERVES 4 (change servings and units)

Ingredients

  • 1 tablespoon olive oil
  • 1 brown onion, thinly sliced
  • 2 cups grated cheese
  • 2 tablespoons chives, chopped
  • 8 slices white bread

Directions

  1. 1
    Heat frypan over high heat, ad oil and onion.
  2. 2
    Cook about 6 minutes till well browned, seta side to cool.
  3. 3
    In a small bowl, combine cheese, chives and onion.
  4. 4
    Divide this between 4 slices bread.
  5. 5
    Top with remaining bread and place in heated jaffle iron.
  6. 6
    Cook over low flame for 2 minutes till golden.
  7. 7
    OR use sandwich maker according to instruction booklet.

20 Stars! This was awesome! I used some four cheese & garlic bread I had made earlier in the week, I sliced it very thin and then in half to make small pieces of bread. Then I put a scoop of the cheese/onion/chive mixture on each and toasted them in the same pan I used for the onions. I used a mix of shredded swiss and sharp cheddar cheese and added about 1T of mayo to the mix. These were amazing little bites and I wish I had made more. The flavor is rich and oustanding. Perfect!     Cheese and onion toasties rate as one of my all time favourites. I have to be honest-chives being another sort of onion don't add much flavour wise to this recipe BUT I have them growing and like to use them and they add visual appeal to the dish. I used multi grain bread as that is all we eat.
