This recipe comes from the 1983 cookbook, Traditional British Cooking.

SERVES 4 (change servings and units)

Ingredients

    In lightly salted boiling water, cook potatoes until just tender, about 15-20 minutes, then drain.
  2. 2
    In a saucepan over low heat, cook the onion in buttermilk for 5 minutes.
  3. 3
    Add onion & buttermilk to potatoes & mash well, to a creamy consistency.
  4. 4
    Finely chop green onions & beat into the potato mixture along with the butter, then season with salt & pepper, to taste.

    I really like the flavors and texture of these mashed potatoes. I made my buttermilk with whole milk and vinegar.Thanks Syd Made for 123 hit wonders

    I enjoyed this potato dish very much. It was light and fluffy and full of flavor. The perfect ratio of potato, butter and milk. The potatoes had a nice tang to them, reminicent of sour cream. The potato dish was quick and very easy to make. A really nice comfort dish. I will make this one again.
