A fast and simple side dish for two.

    In a small saucepan, combine broth, carrot, celery, onion, garlic, butter and black pepper. Bring to a boil; lower heat and simmer for 3-5 minutes then remove from the heat. Stir in rice; cover and let it stand for 5 minutes or until the liquid is absorbed. Sprinkle with cashews and some fresh minced parsley.
