A no bake recipe that's easy and quick to make. This recipe also makes a delicious pancake filling if you chop the bananas instead of halving them. Try stacking the pancakes between layers of bananas and sauce.

SERVES 4 , 4 bananas (change servings and units)

Ingredients

  • 4 tablespoons butter
  • 7 tablespoons brown sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon orange liqueur (Triple Sec, Cointreau, Grand Marnier)
  • 4 bananas, sliced in half lengthwise

Directions

  1. 1
In a pan, melt the butter, add the sugar, stir to combine and simmer for 3 minute.
  2. 2
Add the lemon and liqueur and stir gently.
  3. 3
Put the bananas in the sauce and simmer for 5 min, or until the sauce thickens. Occasionally spoon the sauce over the bananas to baste them.
  4. 4
Serve with vanilla ice cream or waffles and whipped cream (optional).

I really enjoyed this, as did the kiddos, ages 5 yrs and 18 mo. I used just 2 bananas, since that's what I had, and left the sauce amounts the same to serve over sourdough pancakes. Really good. I did add spiced rum rather than the liqueur, and let come back to a boil to cook out the alcohol, then simmered. The lemon gives this a really bright taste that cuts thru the sweet pancake. As usual, I couldn't get my freak of a husband, who'd rather eat store brand cheap pancake "syrup" to try this, but I will definitely be making this again. Thanks for sharing.
