California Pasta Salad

A delicious spinoff of a cold California pizza my mom sometimes makes.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Cook pasta according to package directions.
  2. 2
    Chop vegetables while pasta is cooking.
  3. 3
    Mix olive oil, red wine vinegar and lemon juice in a small bowl with a fork.
  4. 4
    In a large bowl, mix cooked pasta, chopped vegetables, dressing mixture, fines herbes, and salt.
  5. 5
    Sprinkle feta cheese on top of pasta and enjoy!

Don't care what anyone else says, even though I live in California, I'm not a fan of the avocado, so only used half of a small one (diced small!) for this recipe, & that was more than enough for me! I did, however, really enjoy the combo of bacon & feta cheese & am happy to keep this recipe around! [Tagged, made & reviewed for one of my adoptees in the current Pick A Chef]

    This is a delicious salad. I realized I was out of bacon when I was making it, so I couldn't add any. I definitely will next time though. For the tomatoes, I used halved grape tomatoes from my garden. The salad had a lot of flavor and tasted great. The fines herbes were a great addition. Thanks for the wonderful recipe!
