From the Food Network, up here for safe-keeping and halved from the original amounts called for. Except for peeling the shrimp, it was relatively fast and easy to make! My version serves about 4-5 (lotsa shrimp for one person, I make this planning to get at least 3 meals out of it.)

SERVES 4 , 4 servings (change servings and units)

    Peel and wash the shrimp.

    In a large bowl, coat the shrimp with the olive oil. (Note- you might need less than 1 cup. I think I used less. Just use enough to get the shrimp fully coated and have a little extra for sauteeing.).

    Add the spices, and mix well.
  4. 4
    Let sit for 10 minutes for the shrimp to absorb the Cajun seasoning and oil and fully marinate.

    Pour the entire contents of the bowl into a frying pan, and cook on medium-high heat until the shrimp are pink and opaque.

    Serve immediately, great with rice; and also with some pasta and greens with cannellini!
