Cajun Chicken Salad for Two

Ingredients

Directions

    Whisk together first 5 ingredients; set aside.
  2. 2
    Toss together lettuce, tomatoes and onion. Divide between 2 plates.
  3. 3
    Liberally coat chicken breast with Cajun seasoning.
  4. 4
    Heat 1 tablespoon vegetable oil over medium-high heat; add chicken and fry until cooked through and crusty, about 4 minutes per side.
  5. 5
    Transfer cooked chicken to plate and cut into crosswise thin strips.
  6. 6
    Arrange chicken atop salad.
  7. 7
    Spoon dressing over and serve.

    This is so yummy! I doubled the sauce but kept the chicken amount the same and it served 4 people. We loved the sweet taste of the dressing. I used a lot of cajun seasoning cuz we enjoy spicy food. I prepared the chicken on the grill during our 4th of July RV trip. Thanks for posting.

    EXCELLENT!!!! I used McCormick's Gourmet Collection Cajun Seasoning which was excellent. Instead of pan frying the chicken, I flattened them and threw them on the grill until the internal temp was 150 degrees. Very juicy and tender to lay upon a bed of Spring Mix greens. The dressing was a little tart/mustardy so I added an extra tablespoon of olive oil and honey which made it perfect for us. Thanks for a great dinner tonight. Made for Holiday Tag.

    This is terrific and went together so easily it took more time to pick the tomato from the garden, then to put this together. I followed this exactly, except I used a white onion (didn't have red) and cut the dressing in half. (I reduced the dijon to 2 tablespoons) I accidentally shredded the chicken, instead of cutting it in strips, but don't think this detracted from the recipe at all. Served on a bed of fresh garden romaine and boston lettuces. Yummy! Yummy! Made for Everyday is a Holiday tag game July 2009
