Braised Pork Chops W/ Sweet Potatoes

SERVES 4 , 4 pork chops (change servings and units)

Ingredients

  • 4 pork chops, cut 3/4-inch thick
  • 2 1/2 tablespoons flour
  • 1 tablespoon olive oil
  • 1 cup chicken stock
  • 1 cup unsweetened apple juice
  • 1/2 teaspoon dried thyme
  • salt and pepper
  • 1 1/2 lbs sweet potatoes, peeled and cut into 1/4 inch slices

Directions

    Trim pork and dredge in flour. Saute pork chops in large nonstick skillet with oil over moderate high heat, 2 to 3 minutes or until thoroughly browned on each side, turning once. Keep chops warm. Return skillet to the heat, and add the chicken stock, apple juice, thyme, and salt and pepper. Bring to a boil, stirring occasionally. Return chops to the skillet with potatoes. Cover and simmer about 45 minutes or until the chops are cooked through and and the juices run clear.
