Blackberry Herb Filet Mignon

This recipe I got from Sandra Lee. It is th perfect filet I think

SERVES 4 , 4 steaks (change servings and units)

Ingredients

  • 4 filet mignon steaks
  • 1 1/16 ounces grillmates marinade
  • 1 talespoon herbes de provence
  • 1/3 cup cognac
  • 3 tablespoons blackberry vinegar
  • 3 tablespoons olive oil
  • 1 cup blackberry
  • 3 tablespoons butter

Directions

  1. 1
    in a ziploc bag add all ingrients except butter.
  2. 2
    marinate 6-8 hours.
  3. 3
    remove bag 30 minutes before cooking.
  4. 4
    melt butter in heavy bottom skillet.
  5. 5
    sear steaks until desired doneness.
  6. 6
    5 minutes each side for rare, 10 minutes each side for well done.

Yummm...I remember picking wild blackberries in my back yard as a kid in Pennsylvania. I can't wait to try this one.
