Black Bean-Tomato Soup With Cilantro-Lime Cream

From Cooking Light. This was one of the first black bean soups I made and we all enjoyed it very much. I used an immersion blender right in the pot. Timings are approximate

SERVES 4 (change servings and units)

    Cook bacon in a large saucepan over medium heat until crisp.
  2. 2
    Remove bacon with a slotted spoon, reserving 1 teaspoon drippings in pan; set bacon aside.

    Add onion and celery to pan; cook 5 minutes or until celery is tender.

    Stir in 3/4 teaspoon cumin, chile powder, and garlic; cook 1 minute.

    Stir in bacon, pepper, beans, tomatoes, and broth; bring to a boil.

    Cover, reduce heat, and simmer 10 minutes.

    Place half of bean mixture in a blender. Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Place a clean towel over opening in blender lid (to avoid splatters).

    Blend until smooth.

    Pour into a large bowl.

    Repeat procedure with remaining bean mixture; process until smooth. Keep warm.

    Combine sour cream, remaining 1/4 teaspoon cumin, cilantro, rind, and juice in a small bowl. Drizzle cream over soup.

Yum! I ended up discarding some of the extra liquid at the blender step, because I prefer a thicker soup. I didn't have chipotle powder, so I substituted some red pepper flakes. Served with chicken & cheddar quesadillas (which were excellent to dip in the soup, I definitely recommend it). Thanks for posting!

    I don't know where to start. First let me admit - I did not think I would like this soup because I have never come accros a black bean soup that I liked and I actually avoid them. I decided to make it because DH really likes them and I have never made one myself. So after putting it all together - I added a bit more garlic, a hot pepper, used 2 tsp chipotle in adobe sauce - I served it for the two of us and gave DH a big bowl and a ridicously small bowl for myself, thinking I should at least taste it. Boy - was I ever wrong!!!! We absolutely LOVED this soup - this is a must try - even for those of you who like me really don't like black bean soups I had to go back with my small bowl for several more. Like all the other reviews I will say that the sour cream topping is a MUST - it elevates the soup to new highs. I will be making this again for sure. Made for Gimme 5.

    Followed exactly, and can't say I would change a thing, the only thing different I might do, is following the slurping with a jolly ol "jig"! Dancing around, what's this all about? Just you try and see before you get in a bout' .......Beans, cumin, tomatoes too, all bring this soup right to a crest-to. The sour cream dressing is a must! Perfectly, delightful!     If your looking for flavor with a capitol "F" you've just found it. I didn't puree and omitted the bacon out of personal preference and it still kicked butt. Don't skip the cream blend topping, it really is the crowning glory in this recipe. It's addition really sends this recipe over the top. Wicked you have done it again and given me another Keeper that is also so quick and easy. Made for Photo Tag
