Big Melt-In-Your-Mouth Brown Sugar-Apple Cookies

A delicate and soft sugar cookie with chunky applesauce topped with a very simple buttercream icing. You could use chunky pear sauce if its in season. Its a perfect fall cookie, although not heavy on apple flavor it definitely makes a moist cookie. This cookie is a comforting crowd pleaser

SERVES 12 -17 , 12 -17 cookies (change servings and units)

    1. Preheat oven to 375. In medium bowl, whisk flour, baking soda, baking powder and salt together.

In large bowl, using an electric mixer, beat 1/2 cup butter and brown sugar until fluffy and light. add the egg; beat until smooth (for around 2-4 minutes). with mixer on a low setting, alternate between the flour mixture and applesauce beginning and ending with the flour mixture (DONT OVERMIX).

    3.drop cookie dough by heaping tablespoons, 2 inches apart (I did 6 to a cookie sheet). Bake until light/medium golden brown and/or insert a toothpick in the center of the cookie and it comes out clean. around 10-14 minutes. transfer to a wire rack and allow to cool completely.

    4.meanwhile make the frosting: in a large bowl, using electric mixer, beat 1/2 cup butter (and prefered extract), gradually add confectioners' sugar until smooth.

    5. when cookies are cooled frost cookies with the buttercream and add sprinkles or any type of decorationy. Enjoy.
