(Best Ever) Thai Chicken Curry

WOW! My Mum made this tonight out of a recipe book she owns and it is THE BEST meal I have ever had! It tastes so authentic! Please dont discount it cos its not yet rated....try it and then rate it, can guarantee this one is over 5 stars.

SERVES 4 -6 (change servings and units)

Ingredients

    Process onion, ginger, chilli, garlic and oil in a food processor until smooth.

    Cook in pan with coriander, cumin and turmeric for 2-3mins.
  3. 3
    Add chicken and little more oil if needed and cook 2-3mins.
  4. 4
    Add chicken stock and tomato paste and stir well to combine. Bring to boil then reduce heat and simmer covered for 20 minutes.

    Stir in coconut cream and heat through then stir in coriander.

Tried this the other night, and it came out good. I was hoping it would WOW me, but unfortunately it didn’t. Don’t get me wrong – it was GOOD, just not the best curry I’ve ever had. Next time I will probably double the spices as the flavor was a little weak. Maybe it is just because I am used to the curries at local Thai restaurants which usually pack a huge punch of flavor. My husband liked it but agreed next time we will use more spices and use thai red chilis (which we couldn’t find, so we used Serrano chilis instead). Please don’t be discouraged that my review isn’t 5 stars, maybe this curry was just not for me – for you it might be the best!!! Please try this recipe.
