Best Ever Bran Muffins

This recipe is from my Aunt and is the best bran muffin recipe I have ever tasted. You can replace whole wheat flour for regular flour to lighten it up a bit. Enjoy!!

4 -5 dozen muffins (change servings and units)

    Boil the water. Place 100% Bran in a bowl and add boiling water - let soak.
  2. 2
    In a very large bowl, mix sugar and margarine; add eggs & molasses.
  3. 3
    Mix in flour, baking soda, & salt.
  4. 4
    Add Bran flakes, 100% bran mixture and buttermilk - mix well.
  5. 5
    Bake @ 400 C for 15 minutes.

Very good recipe but, take this as a warning, this is a HUGE recipe. It makes at least 5 dozen... That said, I used half wheat flour, half white. I also replaced the wheat bran with oat bran. I would warn that the soaked bran should have a little of the buttermilk liquid mixed in with it before adding it to the batter- it didn't really dissipate very well. Otherwise, VERY good! If you, your kids, you neighbors, your dog and your church potluck like bran muffins, then this is the recipe for you!=)
