From Taste Of Home's Big Book Of Soup

SERVES 8 , 1 pan (change servings and units)

Ingredients

  • 1 lb ground beef

  • 1 (46 ounce) can v8 juice
  • onion soup mix, 1 envelope

  • 1 (3 ounce) package beef ramen noodles

  • 1 (16 ounce) package frozen mixed vegetables

Directions

  1. 1
    In a large saucepan, cook beef over medium heat until no longer pink; drain. Stir in the V8 juice, soup mix, contents of noodle seasoning packet and mixed vegetables.
  2. 2
    Bring to a boil. Reduce heat;simmer, uncovered, for 6 minutes or until vegetables are tender. Return to a boil;stir in noodles. Cook for 3 minutes or until noodles are tender.
