I'm asking all my Zaar friends to come up with their favourite left-over turkey recipe. I already have an excellent turkey soup recipe. Thanks a bunch.

try this one

chicken or turkey a la king in toast cups

or if you have potatoes and veggies left over also you can make a shepard's type pie with left over gravey, veggies, cubed turkey and a mashed potato top sprinkled with grated cheese.

TURKEY CASSEROLE

2-3 cups leftover turkey or chicken
1 can cream of chicken soup
1 can milk
1 lg. bag of noodles
1/2 cup Potato chips, crushed

Take leftover turkey or chicken and cut in small pieces. Add soup and milk. Stir together. Cook noodles as directed and add to mixture. Bake at 350 degrees approximately 1 hour. Put crushed potato chips on top for last 15 minutes. Serves 6.


TURKEY-BISCUIT CASSEROLE

3 c. leftover turkey or chicken, chopped
1 can cream of chicken soup
1 (10 count) can biscuits
1/2 sm. pkg. mixed vegetables
1/4 c. chopped onion
2 tbsp. butter
1/4 to 1/2 c. milk
Garlic powder
Parmesan cheese
Pepper

Prepare vegetables according to package directions; drain. In large saucepan, sauté onion until opaque. Add turkey, vegetables, soup, and enough milk to thin slightly. Add garlic powder and pepper to taste, cook until bubbly. Pour hot mixture into a large casserole dish and top with quartered biscuits. Sprinkle with Parmesan cheese and bake at 400 degrees until biscuits are golden brown.

TURKEY TETRAZZINI

1 (7 oz.) pkg. spaghetti
1/4 c. butter
4 oz. mushrooms (fresh or canned and
drained)
1 sm. onion, chopped
1 1/2 tsp. lemon juice
1/3 c. flour
1 tbsp. salt
1/2 tsp. paprika
1/8 tsp. nutmeg
2 c. turkey or chicken broth
1/2 c. half & half
2 c. leftover, cubed turkey
1/2 c. Parmesan cheese
Paprika

Cook spaghetti using directions on packet. Drain well. Place in greased 8x12x2 inch dish. In 2-quart casserole, place butter, mushrooms, onion and lemon juice. Microwave at high 2 to 3 minutes, stirring after 1 minute. Stir in flour, salt, paprika and nutmeg until smooth; microwave at high 1 minute. Stir well. Gradually stir in broth. Microwave at high 5 to 6 minutes, stirring after 3 minutes until thickened. Mix in half & half and turkey. Pour over spaghetti. Sprinkle with cheese and paprika. Microwave at high 7 to 9 minutes, rotating dish half turn after 4 minutes until hot. Makes 4 to 6 servings; can be halved

I make a very simple turkey pie that family likes almost as well as the Thanksgiving dinner.

Your favorite pie crust
4 cups leftover turkey
1 cup chopped onions
Leftover gravy


Make pie crust. While it is chilling saute 1 cup chopped onions until carmelized. and mix with turkey and gravy (do not heat gravy). Amount of gravy is really up to you. Cover with top crust and bake at 400 degrees for 20 minutes; reduce oven to 350 degrees and continue baking for another 20 minutes or until brown.

Serve with fruit salad and you've got a delicious meal!

*Turkey works well with the chicken ones listed. I only listed the ones I have tried. We cook Turkey several times a year so I try different things to use it up or freeze!

Our entire reason for having turkey at Thanksgiving is to be able to have turkey sandwiches for a week afterward! icon_biggrin.gif

Ingredients needed:
Good bread, either sourdough, whole grain, or something with a vein of herbs or olives in it.
Durkey's Sandwich Dressing (a mayo/mustard sort of combination. Tangy)
Yummy big slices of turkey seasoned with salt and pepper
Fresh cranberry relish (we make our relish by grinding up a bag of cranberries 2 whole oranges including peel, and about 1/2 c sugar. No cooking. Adjust to your own taste. Marvelous!)
Green leafy lettuce

That's the basic and the most important ingredients. No alterations, except the bread.

I've haed that some people out there like to put dressing on the sandwich as well, but that just sounds silly to me. I've also tried it with some of Stonewall Kitchen's Garlic and Onion Jam substituted for half the Durkee's and that's not bad either.

Oh, a different sandwich, also yummy, I had at a bakery once:

The Granny Gobbler

Sourdough or other quality bread
Chinese hot mustard
Thin slices of unpeeled Granny Smith Apple
Nice slices of turkey

Those are the main ingredients I remember. I'm sure you could add sprouts or something if you wanted. It's really awesome!
