Old-Fashioned Carrot Salad

I'd love to make this for my son's school snacks, but would like to maybe change the mayo to plain yogurt and use already grated carrots (healthier with yogurt, easier with pregrated). I was wondering if anyone knows if the yogurt would still give it a good flavor and how many cups of the carrots I would use to make the salad? TIA!

Try it with a small portion first as an experiment.

The last time I subbed yogurt for mayo in a salad, I wasn't happy with the texture OR the flavor

It will have a different mouthfeel and have a tart taste with the yogurt. I'd use Greek style yogurt/drained yogurt/yogurt cheese so there's less weeping of whey. I'd try putting in a small amount of mayo, too, just because I like it. Pre-grated carrots are a great convenience, but if you are concerned about maximizing nutrients you are better off grating them fresh.

If you have a food processor, use it to grate fresh carrots.
I think the pre-grated carrots have lost a lot of their flavor and nutritional value by the time they make it to market and your fridge.

I always use reduced / low fat Hellman's mayo and lightly coat. I imagine you can cut back on the mayo amount that is recommended.

Hi - How about trying something a little different? My Carrot Relish recipe has been very well received by school age children (as well as adults), contains no mayo and will not spoil if left at room temp for the day. Give it a try and let me know how you like it.

I'm from across the sea, but I have never heard of a carrot salad with mayo.

We use the same ingredients (grated carrots, pineapple and maybe seedless raisins) but the "dressing" of choice is fresh orange juice.

If it is slightly too tart, a teaspoon or two of sugar added to the salad or the dressing won't do any harm.

To the best of my knowledge that's the only dressing you'll find on a carrot salad in SA. It's fresh-tasting and healthy.
