I made
Kathy at Recipezaar's
Broccoli Stuffed Baby Portabello Mushrooms for the Australian/New Zealand recipe swap #14. Zaar was extremely busy during that time, and Kathy and Liza were working overtime (IMO). I felt they needed to play. I asked both of them to play this game with me, and they did. They were happy to take a small break and play a while... and I got some good recipes!
I turned on the oven (350 degrees) and chopped the mushroom stems...
and the onion...
melted the butter butter in my favorite skillet over medium heat...
and cooked the onion and broccoli 2 minutes, (stirring occasionally).
Then I stirred in the mushroom stems, cooked for 2 more minutes, stirring occasionally. After it cooled slightly, I stirred in the bread crumbs and cheese. Then spooned the vegetable mixture into mushroom caps and placed them on ungreased baking pan, and put it in the oven for 15 minutes.
I garnished with the sweet pepper pieces...
and we ate them with
Fresh Vegetable Bake and
Basmati Rice. Excellent (vegetarian!) dinner!

I love portabello mushrooms, and my tummy is grumbling for more after looking at your gorgeous pics.
