My
Orange Sorbet is one of my favorite desserts to make, and one of the favorites of my guests. My mother frequently asked me to make it for her.
I start with Valentia Oranges, they are the juice oranges. The Navel Oranges do not work well with this.
I squeeze the juice and pour it into the measuring cup.
This is the pile of orange zest. I have a micro planer, which makes it very easy.
After I put the orange juice, zest, syrup, and any water needed, I pour it into a glass jar, cover it and refrigerate. I keep it in the frig for at least 2 hours, but no more than 2 days, because I do not want it to "get old" or sour. The colder it gets (except for freezing), the better.
Then I assemble the ice cream/sorbet maker, turn on the power, and pour in the chilled liquid.

After it finished (about 30 minutes for my machine), I packed it into a container to put in the freezer. At this point, you could actually serve it, but we were having a
Summer Dinner for Ten Close Friends and I needed to do as much ahead as I could.
Since I had made the sorbet a few days before the party, it was rock solid. If I had good sense, I would have taken it out of the freezer a bit ahead, so it would be easier to scoop.
I wanted this dinner to be very special. I made chocolate bowls to serve the sorbet in. (The making of them is another long and funny story).

We figured people would want seconds, or thirds, so we put the rest in one of the
Ice Bowls I had made the week before. You can see what fun this was, as Elisabeth served herself more, and Pete waited patiently for his turn. I had the giggles.
We ate it all!... as much as we could scrape out of the bowl. The whole evening was lots of fun.
