How to Truss a Chicken

Trussing a chicken before roasting will help the bird keep its shape. Trussing is also important when using a rotisserie so that the bird is not flopping around while it cooks. In the small counter-top rotisseries it also keeps the wings from hitting the burners inside the rotisserie.

That is an awesome tutorial!!!

Actually, I use my rotisserie a LOT! I have a counter-top one and I love that it cooks the chicken without heating up the house! Many of the chickens I listed above were cooked in it icon_smile.gif

Those are beautiful pictures of trussing a chicken!!! The explanation is wonderful too, nice and easy!!! Thank you much!!!!!
I enjoy cooking a chicken super slow in the oven, so the meat just falls off. For some of those asking for recipes, I generally just put a whole chicken in a roasting pan, with a lid! I add a bit of water to the pan, and season that chicken up with whatever I want. Just go for it, and have fun with it. I usually put at least, parsley, garlic, lemon pepper, sea salt, and black pepper(freshly grounded.) I love to squirt the bird with lemon or lime also. I really prefer lime in cooking. Then, I generally add a couple of chicken bouillon cubes, or good chicken broth instead of the water. Then, after it has cooked for awhile, just add whatever vegetables you like. I always add potatoes(skin on) and carrots. I often use whole onions as they come out nice and sweet. You could add mushrooms etc. Just about any vegetable would be good as it is slowly roasted. Just enjoy yourself and see what you come up with!!!! Just remember to baste the chicken and veggetables every now and then. I also add some butter on top of the chicken during the cooking.
