Tried a search on google and this forum/site was one of the one's that came up
There are a lot of people after this one.
Just located Cosi's site and they state that they use old italian/roman recipes in wood fire ovens that a 2 mellenium old. This could be a point looking at old italian/roman recipes that are baked in wood fire ovens (the difference between a wood fired pizza and regular oven), don't know if they actually use wood fire ovens in their establishments or not (there are some italian places here in Perth Australia that do use wood fire) all facts to consider.?

Is it a store or a flatbread manufacturer? I am not familiar with that name.

I finally gave up looking for a recipe for this and ventured out on my own to experiment and came up with something very close. If you like to make bread from scratch, that's great, but I've tried two ways and got greater success from using the frozen bread dough from my grocery store.
I let it thaw overnight in the fridge...you really don't want it to rise too much.
Press it out so that its the same width as their bread and about 1/2"-1" thick.
Use your fingers to press indentations all over the "slab" of dough, lightly brush with olive oil and then sprinkle with salt.
I bake it in a preheated 450 degree oven on a hot pizza stone until it's a little brown and and crusty on top.
You may want to tweak it a little to suit your taste, but I made a pretty tasty faux-cosi sandwich with it

flour, milk, water, oil and salt. They use a starter, no yeast.
