This is the most incredible soup. I guess, more than anything, I wanted to promote it, because it is not my recipe.

In the Spring of 2007 PAC, I picked
Aileen2 as one of my babies. I made her
Courgette Veloute because we were overrun with Zucchini. Boy were we lucky!

This is one of the easiest soups I have ever made, and certainly very tasty.
First, I roughly chopped the zucchini and placed it in a saucepan.
I covered it with chicken stock, brought it to a boil and let it simmer until tender.
I used the stick blender to blend the zucchini until smooth, added the Laughing Cow cheese wedges, cooked another few minutes, and blended until smooth.
Who knows which time we had this bowl... we have enjoyed it so many times since discovering this great soup! I garnished it with strips of sweet red bell pepper. Sometimes, I peel the zucchini, sometimes I don't. It is an excellent cold soup, also good as a hot soup. Last year, we had no zucchini to give away. I made enough soup to freeze so that during the Winter, we could have it as a hot soup and remember the Summer.
In the Summer, it is a wonderfully cold refreshing soup. We served it at our
Summer Dinner for Ten Close Friends and everyone loved it.
